Ingredients:
For the crust:
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
For the lemon filling:
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • ½ cup fresh lemon juice
  • Zest of 2 lemons
For the topping:
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • Additional lemon zest for garnish (optional)

  1. Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish or line it with parchment paper for easy removal.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar for the crust. Mix until the crumbs are evenly moistened.
  3. Press the mixture firmly into the bottom of the prepared baking dish to create an even crust layer.
  4. Bake the crust in the preheated oven for about 10 minutes or until it is lightly golden. Remove from the oven and let it cool for a few minutes.
  5. Meanwhile, in a separate bowl, whisk together the egg yolks, sweetened condensed milk, lemon juice, and lemon zest until well combined and smooth.
  6. Pour the lemon filling over the cooled crust and spread it evenly.
  7. Return the baking dish to the oven and bake for another 15-20 minutes or until the filling is set and slightly firm to the touch.
  8. Remove the dish from the oven and let it cool completely. Then, refrigerate for at least 2 hours or until chilled and firm.

  9. Just before serving, prepare the topping. In a chilled mixing bowl, whip the heavy cream and powdered sugar until soft peaks form.
  10. Spread the whipped cream evenly over the chilled lemon bars.
  11. Optionally, sprinkle some additional lemon zest on top for garnish.
  12. Slice the creamy lemon squares into squares or rectangles, and serve chilled.
